Raw ginger Thai salad


I came across this recipe from someone that I follow on Instagram, who shared from someone else. In the post, they were having a raw vegan challenge. Even though I did join the challenge, I thought it was a recipe that looked really good. And it was! This is one of my favorite salads now. Transitioning into plant-based, I don’t actually eat as many salads as you would think someone would eating mostly veggies. Salads don’t seem to satisfy my hunger most of the time. I usually will have a salad along with pasta or soup because it’s more filing. This raw ginger Thai salad actually leaves me satisfied. I think it’s the raw zucchini that gives me the satisfaction that I looking for, I’m not sure.

This was also the first time I ever had raw zucchini. I was unsure how I would like it at first, but it was great! I did not add the tofu in my salad because I just don’t like tofu. Instead, I added chopped parsley. The dressing is amazing! It has a sweet, creamy almond flavor and it mixed perfect with these combination of vegetables. My son is a little too young to appreciate salads yet, but he did like the raw zucchini, broccoli and red bell pepper with the dressing combo. So, if your looking to try a tasty raw vegan dish, I would defiantly recommend this one.


Salad ingredients:

  • 1 cup raw broccoli
  • 2 spiraled zucchini
  • 2 cups shredded red cabbage
  • 1 cup mung beans
  • 1/2 red bell pepper
  • 1 cup coriander
  • 1 avocado
  • 1 cup cubed tofu (optional)
  • 1/2 cup chopped parsley (optional)
  • sesame seed

Vegan Thai dressing


  • 1/4 cup almod butter
  • 2 tbs tamari (soy sauce)
  • 2 tbs 2 tbs pure maple syrup
  • 1 tbs sesame seed oil
  • 1 tbs peanut oil
  • 1-2 tbs filtered water
  • 1 tbs chili sauce
  • 1 tbs grated ginger
  • 1 garlic clove
  • 1 lime


  1. Combine all of the salad ingredients together in a bowl.
  2. Blend all of the ingredients to make the Thai dressing in a blender until smooth.
  3. Pour desired amount of dressing on salad. (store left over dressing in a small container. Good for about 5 days)
  4. Enjoy!
